This recipe was given to me by my cancer center as recommended by the American Cancer Society especially for people experiencing a sore mouth, taste alterations, or as extra nutrition for those battling weight loss. It seems to me to be an excellent summer time dessert or snack for those not lactose intolerant.
Blend until smooth: 1/3 cup cottage cheese or plain yogurt, 1/2 cup vanilla ice cream, 1/4 cup low fat milk and either 1/4 cup prepared fruit-flavored gelatin or one individual ready-to-eat gelatin snack from a Snack Pack - either regular or sugar free.
This thick protein-packed drink gets the tangy taste from either cottage cheese or yogurt. One half cup has almost as much protein as 2 ounces of meat. Depending on whether you use regular or lo fat cottage cheese or yogurt & regular or sugar free gelatin, a full serving has up to 275 calories, 11 g total fat, 31 g total carbohydrate, 28 g sugar, 13 g protein, 1 g fiber, and up to 380 mg sodium.
